The Loon Room is hiring a Lead Bartender to run the stick and help shape one of Milwaukee's more ambitious cocktail programs.
This is a craft-forward bar. We care about balance, technique, and ingredient sourcing. We build menus seasonally, batch with intention, and expect every drink that leaves the well to be one we'd want to drink ourselves. If you geek out on spec sheets, infusions, dilution math, or the history of a forgotten amaro, you're going to fit in here.
What you'll do:
Lead service behind the bar on your shifts. Hone your skills on technique, hospitality, and product knowledge. Collaborate on menu development, including seasonal rotations, specials, and the occasional weird experiment that actually works. Manage par levels, ordering, and inventory for the bar program. Hold the line on consistency, speed, and guest experience during peak service. Keep the back bar clean, organized, and dialed in.
What we're looking for:
Real cocktail experience in a serious program. Strong palate and a working knowledge of classic and modern technique. Leadership instincts. You can run a busy Saturday, train a green barback patiently on a slow day, and handle a difficult guest with grace. A point of view on what makes a great drink, and the humility to keep learning. Reliability, professionalism, and a genuine love for hospitality.
